Will it say something we would not say?

It only answers from the material you gave it: your documents, Q&A pairs, prices and hours, and the pages of your site it may link to. Its instructions set the tone and the offers. Every reply is stored alongside the content it was generated from, so you can audit any of them.

Can it actually book, or does it send a booking link?

It books. It is given real open slots, offers a few, and when the customer picks one the choice is checked against what was offered, written to the calendar and confirmed in the reply. It cannot invent a time and it cannot double-book you.

What happens when a lead needs a person?

Reply in the thread yourself and the agent stands down on that conversation. You can also write a rule in its instructions for the questions it should hand over rather than answer. Hand the thread back when you are done and it picks up where you left it.

How many leads can it handle?
